Omelet roll with spinach

Preparation Heat the oven to 200 degrees. Put the eggs and milk with a pinch of pepper and salt in a bowl. Beat it up. Heat a butter or margarine in a medium-sized (ovenproof) frying pan and pour the egg mixture into it. Divide the spinach and the cherry tomatoes cut into quarters. When the top is almost completely solidified, you can fold two sides inwards with a spatula so that a kind of folded roll is created. Sprinkle with cheese and put the pan in the oven for another 5 minutes. Tip: do you not have an ovenproof frying pan? Healthy lime avocado cake

Preparation Preheat the oven to 200 degrees. Remove the peel from the avocado and remove the kernel and cut the avocado into pieces. Put the avocado together with the eggs and honey in the food processor and mix until smooth. Cut open the vanilla pod, scrape out the marrow and add it to the batter. Take a bowl and sift in the spelled flour. Then add the baking powder and add it to the avocado mixture in the food processor. Squeeze the limes above. Mix again until smooth. Cover a cake pan with baking paper and pour the batter into it. Bake the cake for 30 minutes. Always check with a skewer whether the cake is cooked. Couscous salad with mint

Preparation Mix the ingredients for the dressing together in a small bowl. Finely chop the mint and also add to the dressing. Cut the tips of the snow peas and if necessary remove the wires attached to it. Cook the snow peas for 5 minutes with a pinch of salt and then drain and rinse with cold water. The couscous according to the packaging. Cook the peas well. Scoop the snow peas through the couscous together with peas and radish slices. Add the dressing and mix in. Chilli with beef

Preparation Chop the onion and fry it in a large (wok) pan with a little oil or margarine. Add the minced meat and fry it loose. Add 2 tablespoons of the chili con carne spice mix. Cut the red peppers into pieces and fry for a few minutes. Then add the tomato puree, tomato cubes and sieved tomatoes and stir everything well. Let this mixture simmer for 10 minutes. Meanwhile, also cook the rice. Then add the beans and corn to the tomato sauce with minced meat and let simmer for 10 minutes. Apple raisin cakes

Preparation Preheat the oven to 180 degrees. Mix the cinnamon, salt and baking powder into the spelled flour. Beat the eggs lightly in a bowl. Add the apple sauce and honey and beat through it. Then add the flour mixture and mix through. Finally add the raisins and chopped nuts. Make 5 heaps on a baking sheet with baking paper. Bake until tender and golden brown in about 12 minutes. Lamingtons – May 2019 Daring Bakers Challenge

For the May challenge Marcellin from Marcellin in Cucina dared us to make Lamingtons. An Australian delicacy that is as tasty as it is elegant. I really encourange you to try this sweet little thing. A cube of vanilla sponge cake dipped in chocolate icing then coated with desiccated coconut – yummy. If you are like me, you will go through 3 stages: you will think that this is really easy to bake;then you will discover that it actually is not as it is a little bit messy; andthen you will taste them and will realize that it was worthy. For a longer time, I had wanted to try some recipe by Stephanie Janorski from the Joy of Baking and as soon as I learnt she actually has a recipe for the lamingtons I knew I was going to use her recipe.
