Healthy banana bread

Preparation Heat the oven to 180 degrees. Place the dates in hot water for 5 minutes to soften them, remove the kernel and cut into pieces. Put 3 bananas with the eggs, cinnamon and dates in a food processor and mix until smooth. Put this in a bowl and fold in the spelled flour and baking powder. Pour the batter into a cake pan and place a halved banana on top. Bake the banana bread in the oven for about 50 minutes. Then check with a skewer if the healthy banana bread is cooked. Pea soup with chicken

Preparation Bring 1.5 liters of water with the stock cubes, split peas and bay leaf to the boil. Let this simmer for about an hour, stirring occasionally. In the meantime, peel and cut the carrot, potato and celeriac into pieces. Chop the leek into rings and wash it well. Peel the onion and cut into fine pieces. Finely chop the celery. Cut the smoked chicken into cubes or strips. After about an hour the split peas start to fall apart and a green mass is formed. This can take a little longer or shorter. Add the sliced vegetables, potato and chicken to the pea soup. Save some chicken to garnish. Let the soup simmer for about half an hour. Season the soup with possibly a little pepper and salt. Couscous salad with mint

Preparation Mix the ingredients for the dressing together in a small bowl. Finely chop the mint and also add to the dressing. Cut the tips of the snow peas and if necessary remove the wires attached to it. Cook the snow peas for 5 minutes with a pinch of salt and then drain and rinse with cold water. The couscous according to the packaging. Cook the peas well. Scoop the snow peas through the couscous together with peas and radish slices. Add the dressing and mix in. Zucchini spaghetti with vegetable balls

Preparation Stir the courgettes through the spirelli or use ready-made courgette spaghetti. Finely chop the onion and garlic and fry in a (wok) pan. Add the tomato puree and bake for 3 minutes. Then add the tomato cubes, season the tomato sauce with some pepper, salt and basil and let the sauce simmer gently. Fry the mushrooms and vegetable balls in a different pan for a few minutes. Then add it to the pan with tomato sauce. Bake the zucchini spaghetti in the empty frying pan for a few minutes until it starts to shrink slightly. Serve the zucchini spaghetti over 2 or 3 plates. Preparation Heat the oven to 180 degrees. Put 3 bananas in a food processor and add the eggs and cinnamon. Mix finely. Then add the spelled flour, baking powder, cocoa, vanilla and honey and mix again. Pour the batter into a cake pan with baking paper or one made of silicone. Chilli with beef

Preparation Chop the onion and fry it in a large (wok) pan with a little oil or margarine. Add the minced meat and fry it loose. Add 2 tablespoons of the chili con carne spice mix. Cut the red peppers into pieces and fry for a few minutes. Then add the tomato puree, tomato cubes and sieved tomatoes and stir everything well. Let this mixture simmer for 10 minutes. Lamingtons – May 2019 Daring Bakers Challenge

For the May challenge Marcellin from Marcellin in Cucina dared us to make Lamingtons. An Australian delicacy that is as tasty as it is elegant. I really encourange you to try this sweet little thing. A cube of vanilla sponge cake dipped in chocolate icing then coated with desiccated coconut – yummy. If you are like me, you will go through 3 stages: you will think that this is really easy to bake;then you will discover that it actually is not as it is a little bit messy; andthen you will taste them and will realize that it was worthy. For a longer time, I had wanted to try some recipe by Stephanie Janorski from the Joy of Baking and as soon as I learnt she actually has a recipe for the lamingtons I knew I was going to use her recipe.
