Healthy pasta salad

Preparation

Cook the pasta until done.

Slice the zucchini with cheese slicer or mandolin and grill it in a (grill) pan with a pinch of pepper and salt.

Mix the ingredients for the dressing together.

Cut the tomatoes in half.

Halve the avocado, remove the peel and kernel and cut the flesh into slices.

Rinse the pasta with cold water.

Mix the pasta with the dressing, tomatoes, grilled zucchini and arugula.

Tear the mozzarella and add to the pasta salad.

Finally add the slices of avocado.

Garnish the healthy pasta salad with fresh basil and pistachio nuts.

This is a vegetarian pasta salad, if you want to add some meat you can use smoked chicken, for example.
