Couscous salad with mint

Preparation

Mix the ingredients for the dressing together in a small bowl.

Finely chop the mint and also add to the dressing.

Cut the tips of the snow peas and if necessary remove the wires attached to it. Cook the snow peas for 5 minutes with a pinch of salt and then drain and rinse with cold water.

The couscous according to the packaging. Cook the peas well.

Scoop the snow peas through the couscous together with peas and radish slices.

Add the dressing and mix in. Serve the couscous salad with the goat cheese and pistachio nuts.
